Every so often, my weekday mornings are quiet enough that I can hit the kitchen and make a delicious breakfast for one. On those rare days, I usually poach up an egg or two, and eat them simply over a slice of avocado toast. Recently, I’ve been upping my game with the addition of fresh chives or basil and a squeeze of lime for fresh, fragrant flavor. I like to have this tasty dish all to myself, but there’s no reason you can’t make up a batch for the whole family too. Kids love avocados and they make for a filling and healthy breakfast option.
Poached Eggs Over Avocado Toast
2 – 4 eggs, poached (get our no-fail poached egg recipe here)
2 slices whole wheat toast, buttered
1 avocado, sliced
1 lime wedge
1/4 teaspoon plus a pinch or two more of sea salt
a few twists of fresh-ground pepper
1 tablespoon minced herbs, chives, tarragon, or basil are my faves
Lay out your slices of toast. Divide the avocado between the slices and fan out; next, sprinkle each slice with a pinch of sea salt and a squeeze of lime juice.
Carefully top the slices with the poached egg(s) and sprinkle with a bit more salt, the pepper, and the minced herbs. Serve immediately.
