A {Not-So-Bad-For-You} Muffin for your Sweet Tooth

I was not born with a sweet tooth. Instead I was blessed with a ravenous appetite for anything salty, crisp and crunchy i.e. potato chips (or anything in the chip family). My son however has a never ending craving for all things sweet. He can put down some serious cookies, cupcakes and ice cream if I let him. He has no limit. I have a feeling there are others out there that can relate?

Thankfully I discovered the Meal Makeover Moms a few years ago. Janice and Liz are both moms and registered dieticians and share a passion to help families eat better. They are dedicated to making over recipes, and making treats like sweets a little better for you. I love what they are doing and my family has enjoyed all of their recipes, both sweet and savory, that I’ve cooked for them, including this particular muffin recipe.

Although I’m not much of a baker, I do enjoy making muffins for my family, especially these healthier Banana Chocolate Chip ones from Meal Makeover Moms. The original recipe does not include coconut, I just added it for fun. They make a great lunchbox snack or an even better dessert with a cold glass of milk.
