But when it comes time to bring a great dish, don’t forget the fruit salad! This beauty features fresh strawberries and blackberries along with cantaloupe chunks. Cantaloupe, Strawberry, and Blackberry Fruit Salad
Prep time: 10 minutes
2 tablespoons extra virgin olive oil
1 tablespoon fresh squeezed lemon juice
1 whole cantaloupe, peeled, seeded, and cut into 1-inch chunks
1 pound strawberries, washed, hulled, and halved
1 pint blackberries, washed
In a small bowl, whisk the lemon juice into the olive oil. Set aside.
Prep the fruit. Arrange in a large, wide bowl in color coded stripes. Drizzle the dressing over the fruit, and toss lightly with your fingertips.
Serve immediately, or cover and refrigerate until needed.
