While I am at it with the making only two of anything I want to eat I want make just two chocolate cookies. That’s right – just two. Why? Because I am trying to lose the baby weight and I need to be careful. Also, having only two cookies makes me stop from inhaling a dozen without a second thought. The other day I made these cookies, complete with sea salt on top, and was transformed. These are both delicious and are just the right size. Now I just need to remind myself not to make these everyday.
A Recipe for Two Chocolate Cookies
2 tablespoons unsalted butter
2 tablespoons dark brown sugar, firmly packed
1 tablespoon granulated sugar, firmly packed
1 pinch kosher salt
1 large egg yolk
1/8 teaspoon vanilla extract
1/4 teaspoon baking soda
1/4 cup all purpose flour
1/4 cup cocoa powder
1/2 teaspoon sea salt
1. Preheat the oven to 350 degrees F.
2. In a large bowl beat the butter, sugars, salt, egg yolk, and vanilla extract. Then stir in the baking soda, flour, and cocoa powder.
3. Divide the dough into two balls and place them on a lined baking sheet at least five inches apart. Bake for 8 minutes, or until the cookies set. Then, remove them from the oven and sprinkle with the sea salt. Allow to cool slightly and serve!
