A Recipe for Two Shortbread CookiesKelsey Banfield
I LOVE a good shortbread cookie. But, too many can be deadly. I mean, what is in that cookie – LOTS of butter. In my quest to make smaller portions of all my favorite things I recently made two shortbread cookies. I love how they turned out, totally golden and buttery and scrumptious. I could’ve eaten a whole plateful but didn’t have the chance since I only had two. Good thing the recipe is easy – I can always make more tomorrow after I hit the gym!
Two Shortbread Cookies
6 tablespoons butter
½ cup powdered sugar
½ teaspoon kosher salt
¾ cup all-purpose flour
1. Preheat the oven to 300 degrees F.
2. In a large bowl stir together the butter and sugar until smooth and creamy. Then stir in the salt and flour.
3. Roll out the dough into a rectangle of 1/8 inch thickness and cut in half. Bake for 10 -12 minutes, or until lightly golden brown.
