I discovered the ease of baking shortbread cookies around this time last year when this recipe caught my eye. It sounds silly I know, but really had no idea how simple shortbread was to bake up! This recipe for “grown up” cookies was in my local newspaper and when I read through the ingredients I knew I had to make them. I love the flavor of a good Irish coffee and to incorporate that into a buttery crisp cookie topped with a sweet Irish whiskey glaze seemed like no-brainer to me.
