For breakfast, I want a meal that is simple but delicious and that my family will love, including picky eaters. Casseroles and frittatas are perfect for those days. Sometimes, and especially during the holidays, I love to make breakfast ahead so that I can actually enjoy the morning. Many casseroles can be made ahead and either refrigerated or frozen until you are ready to bake them. Frittatas are simple to make and take only a few minutes to cook.
