Like banana bread, apple cake can seem ubiquitous. It’s achingly familiar cinnamon notes nothing but nostalgic memories. But I’m here to convince you that apple cake has a bright, vibrant future. Add a few surprising flavor notes, such as dried cherries or cranberries, and apple cake sings–the familiar becomes sublime. And, just like really good banana bread, this classic apple cake is one of my favorite easy cake recipes.
Festive, with huge chunks of apples, and caramel-y molasses flavor, this tasty cake is just right for a quiet weekend dessert, or brunch. Add a simple glaze and it could even be a birthday cake. Add a scoop of vanilla ice cream, and it becomes the best dessert ever. Seriously.
