These after-school or lunchbox-friendly Mini Pita Bites are the perfect size for tiny hands. And really, who doesn’t love a mini pita pocket? This fun veggie bite is easy and yummy with a sweet maple drizzle on top of soft mache greens and moist falafel – stuffed inside warm whole wheat pita. Sometimes we fall back on meat or cheese-based sandwiches for kids, so these meatless bites are a nice change of pace. After-School or Lunchbox Mini Pita Bites
vegan, makes 6 pitas
3 falafels or mushroom nuggets (or another veg-based nugget), sliced in half (see below for recipe links)
1/2 cup greens, I chose soft mache
1/4 cup tahini-maple sauce (see below)
6 mini whole wheat pitas, toasted (found at Whole Foods)
Tahini Maple Sauce
2 Tbsp tahini
1 Tbsp maple syrup
1. Toast your mini pitas and slice down center.
2. Stuff a pinch of greens in each pita.
3. Stuff 1/2 a warmed falafel or nugget in each pita.
4. Drizzle tahini-maple sauce over top.
5. Serve warm!
