An Easter Dinner Classic: Roast Lamb with Mint

For Easter dinner, it doesn’t get more traditional than a roast leg of lamb. But what if you’re feeding a small family? A whole leg of lamb can be a lot of meat for a small group. Instead, try roasting a shoulder cut. Shoulder meat is flavorful, tender, and very moist. We made our simple roast with a white wine marinade and fresh mint, and it was a huge hit.
