The thing I love about pasta is that it can be dressed up any way you want. You don’t necessarily need specific ingredients to make a fantastic meal. All you need is what you have on hand.
In my fridge, I had some broccoli, a lime, and parmesan. While I boiled my pasta, I saw some cherry tomatoes going wilty, so I figured I’d add them, too. What I made was a light, satisfying dish.
So what’s in your fridge? See what you can throw together! This is how I made my dish:
Angel Hair Pasta with Broccoli and Parmesan
1 tablespoon olive oil
1 10 ounce package cherry tomatoes, sliced in half
1 pound angel hair pasta
juice and zest of one lime or lemon
1/2 pound steamed broccoli florets
salt and pepper to taste
1 tablespoon butter
1/4 cup Parmesan cheese, shredded
1. Bring a large pot of water to a boil. While the water heats up, heat the oil in a large nonstick skillet over medium heat. Toss the tomatoes in the hot oil until starting to brown. Turn off heat until the pasta is cooked.
2. When the water is boiling, toss in a tablespoon of kosher salt. Stir in pasta and allow to cook until al dente, about 3 minutes.
3. Turn the heat to low and add the cooked pasta to the skillet. Toss with lemon zest and juice, broccoli, salt and pepper, butter, and Parmesan cheese.
