Aren’t these little bear muffins too cute? They are so simple to decorate and take almost no skill. I simply made an apple muffin and decorated it to resemble a little bear. I spotted a version of these muffins on my local grocery store’s magazine the other day. I picked up the magazine, but before I could clip out the recipe, my hubby had accidentally tossed it. I even went back to the store, but they were already out of their free magazine. So this is my interpretation of the photo I saw. I created an apple muffin recipe made with sweet apples and cinnamon. Then I simply decorated them with a little royal icing, chocolate chips and sliced almonds. I think apple chips would also have made cute ears on the muffins. You could even omit the royal icing for the nose and make a really quick bear muffin with just the chocolate chips and almonds. They were a real treat for my three-year-old. He thought they were so cool.

Apple Bear Muffins Recipe

Ingredients

2 eggs
3/4 cup sugar
1/2 cup butter, melted
1/2 cup milk
1/2 cup apple cider
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup shredded sweet apples
Non-stick spray

Decorations

Miniature chocolate chips
Chocolate Chips
Sliced Almonds or apple chips
Royal icing (recipe follows)

Method

1. Preheat oven to 375 degrees. Add sugar, eggs, milk, apple cider and melted butter to a large bowl. Mix well. Sift flour, baking soda, baking powder and salt together. Add to bowl and mix until just combined. Fold in shredded apples.

2. Spray muffin cups with non-stick spray, even if using paper liners. Pour batter into muffin cups and bake at 375 degrees for 15- 20 minutes or until golden brown.

3. Decorate with a very small amount of royal icing to make the nose. Then add chocolate chips and almonds.

Royal Icing Recipe

Ingredients

1 egg white
1/2 teaspoon lemon juice
1/4 teaspoon vanilla extract
1 1/2 cups powdered sugar

Method

1. Mix egg white, lemon juice and vanilla extract until frothy. Add sugar and mix well. If it’s a touch too thick, add water. If it’s too thin, add more powdered sugar.
