I love my family dinner. But I also really love those nights when one kid has a sleepover, the other one had a slice of pizza at 5:00 at her playdate (always baffling to me) and my husband is out. It means I can go off-roading in the kitchen and make something no one else likes. It’s usually this: A scrambled egg with finely chopped artichokes, a little chopped spinach, some onion and salt all wrapped in a whole wheat tortilla. With a nice cold glass of Sancerre.
