I started making sushi rolls for my kids early and often. As a result, they are crazy for them. My son actually begs me to include them in his school lunch. I was a little hesitant at first. As a shy child, I was slightly tortured by the strange (but delicious) items my macrobiotic parents included in my lunchbox: aduki bean sandwiches, brown rice and tofu, and big, green sushi rolls. Kids are not kind. The jabs I recall from bringing in a “strange lunch” left me more than a little reticent to invite my sensitive son to be subjected to a similar experience. But times have changed. Sushi is as common as a bologna sandwich … and much healthier!
