Today is Ash Wednesday and the first day of lent. The fasting rules for today are pretty simple. You can only eat one full meal, and it must not include meat. These rules will also apply to good Friday. Partial meals or small snacks are permitted at breakfast and at midday. Even though you must abstain from meat today, eggs, dairy, other milk products and condiments made of animal fat are okay. You can even have soups or stews made with beef or chicken stock. Since fish is not considered a meat according to the bishops, most people will eat fish today, and all other Fridays of lent, when meat is not permitted.
These rules can vary greatly for all of us though. For myself, I will be fasting today, then eating a vegetarian meal tonight. Through lent, I will give up breads, sweets and wine. For my husband, he will be fasting on a liquid diet for most of lent, then returning to a vegetarian diet during the last six days. On Easter Sunday he will resume his normal diet again.
This Vegetarian Three-Bean Chipotle Chili would be a perfect meal for your family tonight.
