Award Winning Peanut Butter & Jelly Mac And Cheese

My friend Kathy from Merriment Design created an amazing mac and cheese recipe that won 4th place in a mac and cheese cook off. She beat out celebrity chefs and big time restaurant owners!  I had to make it for myself and the kids, but it’s taken me a while with this kiddo brewing and me not wanting to eat much. Now that I’ve got my appetite back and I’m eating and eating and eating, this recipe made the top of my list. Good thing too because it satisfies all kinds of cravings and decadence and makes for a perfect first day of school special dinner. Keep reading for the award winning recipe…

The Peanut Butter and Jelly Mac and Cheese made as is is simply divine and you can get it by heading over to Merriment Design. After trying out Kathy’s recipe and falling in love, she asked if I would be interested in adapting this to make it healthier. Of course I took on the challenge and I’ve been tweaking and trying to get just the right flavor without much sacrifice. I’m still working on it, I’m close and will definitely be posting once the lighter version is ready to share. If you’ve got any tips for making this healthier please pass them along!  I want to make Kathy proud.
