Bacon, Brie, Apple and Honey Sandwich

If your anything like me you have been cooking up a storm and then cooking some more. I sometimes have zero desire to cook some elaborate meal, but still crave something good. This is it… my solution to a fast delicious meal that can be savored with each bite and only takes a few minutes to make. Especially if you have leftover bacon laying around your fridge. This sandwich is what I call my “In between days of work sandwich” which is perfect for this time of year. It’s kinda funny how I created it…. My fiance was being a bugger as usual, and wanted to eat something, and he said to me “I’m so hungry, and it can’t be just anything, it has to be good.” I was in the middle of typing up a post at that second, but knew if I didn’t get up to make him something the nagging wouldn’t stop. I looked around my kitchen saw a green apple in the fruit bowl, opened the fridge and grabbed the leftover bacon off the top shelf, opened the cheese drawer and found a piece of brie wrapped up in plastic wrap from a cheese dish I had made a few days earlier. The ingredients were coming together so easily. Then I opened my pantry and there was a loaf of french bread sitting next to a jar of honey. I pieced it all together, handed it over to him, and he was in heaven. He said if he could he would have organized a small BBAH parade going from one side of the block to the other because the sandwich was so good. Unfortunately there was no marching band around for hire , and asked if I would settle for a big bear hug instead. I did.
