Baked Banana Empanadas

Empanadas can be savory or sweet. There are truly limitless possibilities for filling these small flaky bites of bliss. Today’s version is a sweet empanada and comes from my friend Liren who writes the beautiful blog Kitchen Confidante. She uses a traditional empanada dough and sweetens it up just a tad. She then stuffs it with naturally sweet ripe bananas (plantains would also be fantastic). And the kicker, she uses a little jackfruit. I’m going to have to try these as soon as possible and think you will want to as well.
