Baked Corn Dog, Muffin Style

We don’t eat a lot of corn dogs around here, but my daughter has recently become quite the fan. I just can’t feed my kid a hot dog covered in fried cornbread, but I want to satisfy her craving. So we came up with healthier version in a cute little mini muffin form. Get the recipe after the jump…

Baked Corn Dog, Muffin Style Recipe

We used this awesome cornbread recipe and added 4 chopped uncured turkey dogs with no added nitrates or nitrites (see photo). We chopped them small enough so my 2 year old can eat without worries. At the last minute we decided to add about 1/4 cup of shredded mexi blend cheese (glad we did!). Pour into greased mini muffin tin and bake at 350 for 8 – 10 minutes. Makes about 40 minis.

    I just made these, and I was surprised how much I enjoyed these too! I was a little lazy and used the Jiffy corn bread mix, but the addition of the cheese and turkey dogs was delicious!

    I just mixed jiffy mix, shredded cheese, and hot dog pieces and baked for lunch. It was good! Thanks for sharing! Mine fell apart too and I don’t live in a high altitude so maybe its the jiff mix? Might try adding another egg next time I make them unless you have any suggestions? I’m no Martha Stewart!

    I made these last night for a couple girlfriends and we really liked them. The recipe itself is more of a kid recipe so I added more flavor to the corn mixture with black and cayenne pepper, garlic paste and mustard. Also, I used gouda cheese since that’s what I had and it came out pretty tasty. We ate them along with bbq sauce and mustard, a pickle would’ve been nice. Also, I only added three sausages, they were kind of small actually and it was more than enough, I guess it depends on the sausages you use. I’m looking forward to trying these with other sausages and cheeses.
