Baked Huevos Rancheros

I am addicted to Created by Diane. Seriously, her website is chock full of completely awesome recipes that are so tantalizing I want to reach through the screen and eat them. When I saw this Baked Huevos Rancheros recipe the other day I went wild. I adore Huevos Rancheros, but they can take time to pull together on a busy morning. Diane’s solution was to bake the tortillas with the eggs inside! Genius! She added some scallions on top and served it alongside some awesome salsa and mexican rice. Now that is a breakfast I would even eat for dinner.
