How delicious do these stuffed zucchini boats look? I saw this recipe recently on Bev Cooks and immediately bookmarked it, knowing that my husband (and hopefully my kids) would absolutely love it. When I saw that the stuffing mixture included golden raisins, almonds and spices like cumin, cinnamon and coriander my taste buds definitely got excited.
I love meals like this, ones that don’t really need a side dish and are completely satisfying. This recipe could probably be broken up into steps too, where you can make the filling ahead of time, then put it all together when you are ready to start cooking. If you are interested in making it meatless (which is what I usually do for my plate when cooking a meal for my family), I would substitute the ground turkey with lentils or even garbanzo beans.
