While we are on our Dumbo-themed circus food kick, the kids and I thought we could surely work something into breakfast. How can we incorporate hot dogs and snow cones and caramel apples into breakfast? We started brainstorming on our favorite breakfast food and both kids mentioned pancakes about 5 times. That’s when a light bulb went off, Funnel Cake! It’s kind of like a pancake and we can get creative by making something delicious with healthy ingredients and skipping the deep fryer. Also, reducing the size – how is it that funnel cakes are bigger than my head? We came up with a recipe so fun, so simple, and so tasty it will take you all the way to the circus searching for Dumbo, the flying elephant.
Banana Funnel Cakes
2 tablespoons whole wheat flour
2 egg whites
1/2 teaspoon confectioners sugar for sprinkling
Smash the banana until smooth and whisk together with egg and flour. Heat a griddle to medium high and spray with cooking spray. Using a spoon, drizzle mix onto griddle to create a 5 inch diameter circular shape, then drizzle swirls and lines in the center to connect the edges without filling it in. Cover and cook for 1 minute. Makes 6 cakes. Using a fine mesh strainer, place 1/2 teaspoon confectioners sugar and sprinkle over the top of all funnel cakes. My 4-year-old ate 2 cakes.
