What do you do when you are in the mood for freshly baked chocolate chip cookies but don’t have time to make an entire batch? Easy. Just make two! That’s right. I never thought it possible until I discovered this awesome technique for making a simple batch of two cookies. It is so easy to do and truly guarantees delicious easy cookies in your hands in a jiffy. It is also fun to make these with kids. They get the cookie treat they desire and you don’t have to negotiate how many cookies they are allowed to have.
A Recipe for Two Chocolate Chip Oatmeal Cookies
2 tablespoons unsalted butter
2 tablespoons dark brown sugar, firmly packed
1 tablespoon granulated sugar, firmly packed
1 pinch kosher salt
1 large egg yolk
1/8 teaspoon vanilla extract
1/4 teaspoon baking soda
1/4 cup all purpose flour
1/4 cup regular oats
2 tablespoons semisweet chocolate chipes
1. Preheat the oven to 350 degrees F.
2. In a large bowl beat the butter, sugars, salt, egg yolk, and vanilla extract. Then stir in the baking soda, flour, and oats. Finally, stir in the chocolate chips.
3. Divide the dough into two balls and place them on a lined baking sheet at least five inches apart. Bake for 8 minutes, or until the edges turn golden brown. Serve!
