BBQ Pork Sandwiches with Slaw

pork sandwich & slaw This is what we call in my house a back-pocket dinner — as in it seems we can always pull it out of our back pockets when we’re not even planning for it. Every single thing on this plate has been procured from Trader Joe’s (have I mentioned how much I love TJoes?): the ciabatta roll, the pork tenderloin, barbecue sauce, broccoli slaw, and frozen sweet potato french fries. And it took just a little more than 30 minutes to make. This is how you do it:

Rub a pork tenderloin with olive oil, salt and pepper and roast at 425°F for about 30 minutes until internal temperature measures 145°F. During the last 15 minutes of roasting, add frozen sweet potato fries to the oven (they roast at same temp). During the last 5 minutes of cooking, brush barbecue sauce on pork. Once the pork is ready, slice it up and serve in rolls topped with more sauce, storebought slaw (or homemade broccoli slaw), alongside fries.
