Here’s another fantastic healthy option for your kids for Cinco de Mayo (and beyond because honestly this is a super dinner idea for anytime of year) from Produce for Kids. This beany cheese-tada is a quick to prepare meal that I know my kids would love! And it’s a meal I can feel good about serving them. Make these tonight and have your kids saying Ole’! Beany Cheese-Tada (recipe compliments of Produce for Kids)
What you’ll need:
2 medium (6-inch) corn tortillas
½ cup mashed pinto beans (drain if using canned)
2 oz. grated Monterey Jack cheese
½ cup shredded Romaine lettuce
½ cup grape tomatoes, cut in halves
What to do:
1. Toast tortilla shells to desired crispiness. Spread heated mashed beans equally on top of the tortillas. Spread half of lettuce, cheese, tomatoes and salsa on each.
