There’s a certain way that really good things taste. Almost all of these ways are fried. I’m not a fan of fried anything for health reasons, but I’d be lying to say that I don’t crave me a decent french fry or donut from time to time. Of course, concerns of any sort can be tossed out the window when you’re talking fried zucchini because it’s healthy, right? Yep. Totally.
The beer-batter on these zucchini fries is light, flavorful, and totally incredible. Cook up a batch of these today, dip them in ranch dressing, and enjoy the way really good things taste.
Beer Battered Zucchini Fries
- 3 zucchini, sliced into strips
- 1/2 cup flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- pepper to taste
- 2 eggs
- 1/2 cup beer or milk
- Oil for frying
1. Heat oil in a large, deep-sided pan on your stove over medium heat.
2. In a small bowl, stir together the flour, cornstarch, salt and pepper. In a second bowl, whisk together the egg and beer (or milk). Dip the zucchini in the egg mixture, then in the cornstarch mixture, back in the egg mixture, then finally back into the cornstarch mixture. Your fingers will be messy. Hang in there. It’s worth it!
3. Gently transfer batter-coated zucchini into the hot oil. Fry just until golden brown. Serve with ranch dressing for dipping. Enjoy!
