Remember that New Year’s resolution you made to eat more greens? Well, lucky you, this recipe is about to deliver big time. Fresh green beans are coated with a tempura batter and quick fried to golden perfection. Can’t find green beans? Swap in asparagus for a totally superb recipe!
Green Bean Fries
1 pound fresh green beans
2 cups rice flour
2 cups beer
1 tsp kosher salt
1/4 tsp freshly ground black pepper
oil for frying
Pour the oil into a large, deep sided pot. Heat to medium heat, or about 375°F.
Whisk together the ingredients. Dip a handful of beans in the tempura batter, toss to coat, then gently lower into the hot oil. Fry for 1-2 minutes or until light and puffy. Drain on paper towels, season with salt, if desired. Serve immediately for best flavor, with ranch dressing for dipping.
