With spring officially here, we’ve lightened up our eating a bit. After the long winter, we’re craving fresh fruits and vegetables, and have been making salads galore. One of my recent favorites is this marinated beet salad served with ruby red grapefruit, red onions, and feta. I loved the contrasting textures, and the way the sweet and sour grapefruit mingles with the mild beets and creamy sheep’s milk feta.
This easy salad is perfect for a light lunch or as a dinnertime side. For a more kid-friendly version, skip the red onions or finely mince so they won’t notice (though, if your kids are like mine, they always notice). Sigh.
Beet Salad with Ruby Red Grapefruit & Feta (adapted from this Brooklyn Supper recipe)
1 bunch beets
1 large ruby red grapefruit, zested and supremed
1 red onion, sliced thin
1/2 cup sheep’s milk feta cheese, crumbled
3 tablespoons olive oil
2 tablespoons red wine vinegar
sea salt and pepper to taste
Preheat oven to 350 degrees. Wash the beets thoroughly and trim off the greens but not the cores. Place beets in a deep baking dish, or anything that will hold 1/8″ of water. Sprinkle the beets with salt, cover tightly with foil, and bake. Check roasting beets after 40 minutes, but cook up to an hour or until beets are tender and you can easily pierce the skin with a fork. Add more water if too much has evaporated.
Meanwhile, make the vinaigrette by whisking together the olive oil and vinegar, with a pinch of sea salt.
Remove beets from oven and set aside to cool. Run beets under cool water to remove skin, or use a vegetable peeler. Trim ends and slice the beets into 1/8 inch slices. Toss bets and red onions with 2/3 of the vinaigrette. Sprinkle vegetables with a generous pinch of salt, and then scatter the grapefruit and feta. Check salt and pepper levels and drizzle with more vinaigrette if needed. Garnish with the reserved grapefruit zest and serve.
