I’ve been making plenty of snickerdoodles lately and last week it occurred to me that I might be able to impart the flavor of our favorite cookie into waffles. To give it a go I add a pinch of cream of tartar to the pancake batter for that extra bite. Once the waffles where baked I brushed both sides very lightly with a little bit of butter and sprinkled the top and bottom with cinnamon-sugar. We loved this neat topping in lieu of syrup. I have to say, they certainly tasted a lot like snickerdoodles to me, which is good so I don’t have to eat anymore actual cookies for breakfast!
Cream of Tartar
1 tablespoon melted butter
1. Make one batch of the pancake mix of your choice and add one generous pinch of cream of tartar to the batter and mix well. Cook the waffles on the waffle iron. While they are still warm brush each side with a little melted butter and sprinkle with cinnamon sugar. Serve!
