These herbed fruit cubes were inspired by one of my favorite ways to serve chicken, blackberries with thyme cooked with balsamic. I wasn’t about to add balsamic, but blackberries and thyme were calling my name for a more sophisticated drink flavor. Turns out the kids love this idea too and used all the cubes we made!
Blackberry Thyme Cubes
1 pint of blackberries
4 sprigs of thyme
1 teaspoon of sugar
Mash the blackberries and add the sugar. Remove the leaves from the thyme stem and add to the blackberries. Stir and pout into ice cubes trays and freeze for at least five hours. Serve with sparkling water or lemonade.
