Welcome summer. The kids are out of school (at least they are in our neck of the woods!) and I’ve got a mad craving to eat some healthy food. But, of course, with the kids home, we’ve got daily requests for the stuff they like to eat. Mac and cheese, ramen, pizza. You know the list. So, I put together my food desires with theirs and pulled together this simple, fresh tasting BLT Pizza the other nights. It’s dumb good. You know. Like the exact opposite of an ugly cry. Just so insanely simple it shouldn’t taste like a dream come true. But, good heck. You’re going to love this pizza. My kids and I sure do.
- 1 prepared pizza crust
- Ranch dressing
- 2 tomatoes, sliced thin
- 1/4 cup bacon bits
- 1/4 cup scallions, diced
- 1 cup mozzarella or monterey jack cheese
- 2 cups romaine lettuce, shredded
Spread an ample amount of ranch dressing over your pizza crust. No exact measurements here, just do enough until it looks good. Top with tomatoes, bacon bits, scallions, and cheese. Bake in an oven preheated for 14-16 minutes, or until the cheese is bubbly. Top with shredded lettuce before serving.
