If you love classic Southern corn bread, try this creative “blue” twist on it. By using blue corn meal, you can make Blue Corn Bread. Blue corn meal has a slightly sweeter, nuttier flavor than traditional yellow corn meal. This vegan recipe creates an ultra light, fluffy corn bread that really melts in your mouth. Ideal for crumbling over top some veggie chili. Grab a bag of blue corn meal from the store (I used Arrowhead Mills brand from Whole Foods) and try this recipe.
Vegan Blue Corn Bread
makes one square pan – 8 or 9 inch dish
1 cup spelt
1 cup blue corn meal
1/2 tsp salt
1 stick vegan butter, softened (Earth Balance)
1/4 cup maple syrup
1 cup plain soy or almond milk
2 Tbsp water
2 tsp baking powder
1 tsp baking soda
1 Tbsp cider vinegar
optional for extra binding (and nutrients): 1 1/2 Tbsp chia seeds + 2 Tbsp soy milk
1. Preheat the oven to 375 degrees.
2. Combine all ingredients in a large mixing bowl. Blend until smooth.
3. Pour into greased square cake pan or casserole dish.
4. Bake at 375 degrees for 20-25 minutes.
Cool. Serve. Store in fridge. Delicious served chilled too.
