Blueberry + Lemon + Basil CubesMacki West
For our last frozen fruit and herb cubes recipe we decided to use the blueberries that were about to go bad along with our lonely lemon and prune our overgrown basil plant. This recipe adventure was an unexpected delight. So flavorful and refreshing and it melted so perfectly in sparkling water. I think this one might be my favorite.
Blueberry + Lemon + Basil Cubes
1 pint of blueberries washed
1/8 cup of water
2 tablespoons of sugar
handful of basil leaves, washed
Smash the blueberries in a measuring cup with a spout. Add the juice to the lemon and water and sugar, stir. If it’s really tart, add another tablespoon of sugar. Slice the basil leaves and stir to combine. Pour into ice cube trays and freeze for at least 5 hours. Serve with sparkling water.
