Bright and Fresh Summer Dinner: Tomato Basil Salad

Some things just taste like summer. And this incredible recipe sounds simple, but tastes like a dream. I could eat salad eight times a day, for every meal. But this is consistently one of my alltime favorite, go-to recipes. Because the flavors are so bright, so fresh, and so unbelievably perfect together, you simply can’t get enough. Toss this dish together for an easy weeknight meal, and enjoy the season!

Tomato Basil Salad

  • 2 chicken breasts, halved
  • 2 cloves garlic, chopped
  • 4 tablespoons olive oil
  • 4 slices provolone cheese
  • 8 cups arugula
  • 1/2 cup basil, chopped
  • 1 1/2 cups ripe tomatoes, chopped

For the dressing:

  • 1/3 cup white vinegar
  • 1/4 cup olive oil
  • 2 cloves garlic, chopped
  • salt and pepper to taste

Prep chicken by marinating for 15-20 minutes in olive oil and garlic. Salt and pepper generously. Grill until cooked through, place provolone on top of the chicken and allow to melt. Slice into strips. Toss with arugula, basil, tomatoes. Whisk together all ingredients for the dressing. Drizzle on top of the salad. Serve immediately and enjoy!
