This drink is incredibly refreshing and quite literally as cool as a cucumber. Though this is the perfect cocktail for a steamy afternoon by the pool, I’ve been known to whip up a batch in the dead of winter to brighten up the gloom with a sip of summer.
3 slices cucumber, cut to a quarter-inch
8 mint leaves
2 1/2 ounces white rum
1 lime, for juicing
1 ounce simple syrup
Simple syrup is very easy to prepare. Place equal parts sugar and water in a small saucepan and heat until sugar is dissolved. The mixture lasts a week or so in the fridge. You can also heat the mixture in the microwave.
1. Muddle (smash with a muddler or wooden spoon) the cucumber with the mint in the bottom of a cocktail shaker to release all the juices.
2. Fill shaker halfway with ice cubes. Add the rum, lime juice, and simple syrup. Shake vigorously.
3. Strain the mixture equally into two tall glasses that are 3/4 full with crushed ice. Top with club soda, stir well, and serve.
