Broccoli Week: Broccoli Mashed Potatoes

Raise your hand if you love baked potatoes with cheese and broccoli? I do! And raise your hand if you are often unsure what to do with leftovers? Mine hand is in the air as well.

I have found a good solution for what to do with the extra mashed potatoes and broccoli in the fridge….

Being that autumn is upon us, we have began to make some comfort food and in this house, mashed potatoes is a favorite. We also had some cheddar cheese and a bowl of broccoli that I steamed the other night so I created a side dish that used up the leftovers and left us all satisfied.

Ingredients:
2 cups mashed potatoes, reheated
1 1/3 cups steamed broccoli, chopped and reheated
2.5 ounces reduced fat cheddar cheese, sliced and chopped small
1/8 teaspoon salt

Mix all ingredients together until the cheese is melted.
