When I was growing up in Cooperstown, a small town in upstate New York, Brook’s Chicken BBQ was the ultimate. All school fundraisers and summer picnics revolved around the chicken barbecue truck pulling up and serving perfectly moist chicken, corn on the cob and cornbread. It was sticky, drippy and just perfect in every way. Thankfully you can still buy Brook’s Chicken at the original store in upstate New York. However, since I don’t live there anymore I now have to make the sauce on my own. I’ve worked on a lot of variations before and am getting pretty close to the right formula. This is the recipe I am swearing by these days for perfect chicken barbecue sauce, almost just like Brooke’s!
Just Like Brook’s Famous Chicken BBQ Sauce
4 bone-in split chicken breasts
¾ cup ketchup
3 tablespoons dark brown sugar
2 tablespoons cider vinegar
2 tablespoons Worcesterhisre sauce
1 pinch crushed red pepper flakes
1 large pinch kosher salt
2 dashes hot pepper sauce
Stir everything together in a large bowl. Baste the chicken with the sauce and let it sit in the fridge for at least an hour. Heat the grill and cook the chicken over medium heat, flipping the chicken as needed and basting the chicken as it cooks. Enjoy!
