Brown Butter Fried Egg Sandwiches with Tomato and Basil Puree



I discovered this brilliant twist of a simple fried egg sandwich while visiting Nikki Gardner’s enchanting website Art and Lemons. This recipe is the perfect salute to summers’ end by combining the flavors of basil and tomatoes with the richness of brown butter. Nikki includes a simple recipe for basil puree that she spreads on one side of the sandwich. The tomato side, of course. It’s easy to make and is great for a lazy Sunday morning as we say good-bye to summer.
