Buckles, Crumb Cakes and Streusels (Oh My)!

For as long as I can remember, I’ve been a huge fan of any and all desserts that come with a buttery, crumbly topping. My mom was not a baker, but kept a steady supply of boxed and frozen desserts on-hand. And my favorites were always the ones topped with streusel.

Drake’s Coffee Cakes. Sara Lee “Individual” French Crumb Cakes (so fancy!). And the best of all? Entenmann’s Crumb Donuts (Crumb cake + doughnut? Yes, please.).

So I’m particularly excited to share with you these mouthwatering streusel recipes. I think you’ll agree that this crumbly mixture of butter, sugar and flour makes almost anything better (cinnamon streusel pancakes, anyone?)!

  • Lemon Cherry Coffee Cake 2 of 22

I've never combined cherries and lemon in a recipe. Yet I can almost taste the deliciousness they'd impart to this rich buttery cake. Even better? Frozen cherries mean that you can serve this treat year round - even when fresh cherries aren't available locally.

Can you believe these muffins are gluten-free? These lovely-looking treats are made with brown rice flour (in both the muffin and the streusel topping), and are a great "starter" recipe if you are new to gluten-free baking.

Tiffanie Turner is working through 101 ideas for her donut pans. I screeched to a halt at #49 - these amazing mini coffee cakes. I have made these myself and can honestly say they are the BEST version of crumb cake I've ever had. No donut pan? No worries - I made half the recipe in muffin tins and they were just as delicious.

  • Blueberry Streusel Coffee Cake 13 of 22
    babble blueberry streusel coffee cake

One doesn't usually think of coffee cake as "healthy". But you can feel a little less guilty eating this version - made with whole wheat flour, non-fat yogurt and a reduced amount of butter. Lots of organic blueberries provide extra nutrition and natural sweetness. Win-win!
