Butter vs. Margarine: Chef Alex Explains

The executive chef of Butter restaurant in NYC, The Darby American Supper Club, host of the Food Network cooking shows Alex’s Day Off and Chopped,  Chef Alex Guarnaschelli may be one of New York’s busiest chef’s.  But, when I Can’t Believe It’s Not Butter approached her to host the 2011 launch of their new ad campaign, she couldn’t turn down the offer. 

A classically trained chef, Guaranschelli was skeptical about using the butter spread in her cooking. “They asked me to make a whole menu with I Can’t Believe It’s Not Butter.  And, I’ll be honest.  As a professional chef, I know what I like.  I decided  that if it didn’t taste good, I’d just serve you a meal made with butter, but tell you it was the butter spread.”

Rather than having to “cheat, lie, and steal to make good food,” Chef Alex was surprised to find that she was able to turn out beautiful recipes with I Can’t Believe It’s Not Butter.   “I made biscuits with the product, and the biscuit texture was incredible.  It made me want to eat the dough.”

For families looking to reduce their intake of saturated fat and calories, while not compromising flavor, Chef Alex found the I Can’t Believe It’s Not Butter spread to be a versatile product.  Still, she warns home consumers to be careful when using the product in their regular recipes.  “It’s not butter.  It can’t just be used in place of butter for all your recipes.  It’s its own unique product.”

The I Can’t Believe It’s Not Butter website has released six of her best recipes on their website. I had an opportunity to try them at the 2011 I Can’t Believe It’s Not Butter launch party this afternoon, and they absolutely splendid.  Her flavored butter Spreads (especially her Savory Herb spread) had me licking my fingers and scrounging for crumbs.  The Unbelieveable Biscuits were fluffy, light, and pillow soft. But, you don’t have to take my word for it.  Chef Alex was equally thrilled with the results of her recipe testing:  “I really was in the kitchen, eating those biscuits when they came out of the oven, and saying ‘I can’t believe they’re so delicious.”  A brief pause, and then she adds with a wink, “I can’t believe I just said that.”
