Cadbury Egg Cupcakes

Last year I made these awesome Cadbury egg stuffed muffins and this year I decided to make them into cupcakes. I mean, when you are stuffing something with a Cadbury egg you already know it is going to be over the top, right? Why not make it a chocolate cupcake? I was a little concerned the egg would melt during baking, but it didn’t. The yellow/white yolk did, however, settle toward the bottom of the egg as you can see above. No matter though, it still tasted great!

Cadbury Egg Stuffed Cupcakes

1 batch chocolate cupcakes

1 batch vanilla buttercream

12 Cadbury Eggs

1. Make the chocolate cupcake batter according to directions. Spoon half of it into a muffin tin lined with cupcake liners. Place an unwrapped Cadbury egg in each cup of batter. Spoon the rest of the batter around it until it just covers the egg.

2. Bake the cupcakes according to directions. Allow to cool completely. Meanwhile, make the buttercream frosting. Once the cupcakes are cooled swipe a little bit on top and serve!
