Celebrity Apprentice Pesto Pasta – updated!

Apprentice Pesto Pasta

Apprentice Pesto Pasta

Donald Trump’s favorite foods are pasta and steak, so for tonight’s premiere of the Celebrity Apprentice on NBC, I’d serve up this Money Money Money-Green Spicy Pesto Pasta! I also call it my “Rockstar Pesto” because it’s easy, fast, spicy and bold. Rockstar, celebrity and hopefully, Trumpster-approved…

POST-SHOW UPDATE: Did you watch?? I did! Gary Busey is definitely a piece of work, I hope he sticks around a while for entertainment value alone. And Niki Taylor is so sweet yet talented – so I am curious to see how she does. Richard is such a slime-ball, but he really doesn’t seem to even care how slimy he gets (which makes for good television). RLisa and Star do not mix. And it was sad to see sweet David go. But really, he didn’t have a terribly stiff backbone (at least in terms of how The Celebrity Apprentice works). And sometimes I think Trump likes to get rid of the “quiet ones” first. The loud ones are so much more fun to watch!! Who are you cheering for?..

Celebrity Apprentice on NBC. I adore Donald Trump. He is so much fun. Little known secret, my husband and I almost got married in the atrium of the Trump Tower in NYC. We changed our minds at the last minute though. Too much gold-encrusted everything for our tastes. We did a Miami beach-side wedding instead. But I still love a good Trump-fest on TV. The Apprentice and Celebrity Apprentice are both equally fabulous in my eyes.

Don’t miss the Celeb Apprentice premiere tonight at 9pm on NBC.
And if you are on Twitter, check in in Ivanka Trump’s live tweets!
This season’s celebrity contestants include: LaToya Jackson, David Cassidy, Star Jones, Niki Taylor, Meatloaf, Gary Busey, Marlee Matlin and more…

Serve up Trump’s fave food at your Celebrity Apprentice premiere-night dinner party. I’d proudly serve this dish to Mr. Trump. Money green. I think he’d approve.

I also call this my “Rockstar Pasta” because it is spicy! Rockstars like things hot. Super extreme. And Donald is such a real estate rockstar. So I threw in a large jalapeno – seeds and all. Right into the food processor. Hot. Loud. Metallica style. If you want your pesto a bit more mellow (say, Celine Dion style) – omit the seeds from the jalapeno. Uber rebels can add two jalapenos. Wow. This dish is money. And it’s also dairy-free pesto. Walnuts, basil, garlic, lemon and heart-healthy olive oil means this dish is feel-good, healthy fare. Add it to whole wheat penne for an extra nutritional boost of fiber and nutrients.

Money Money Money-Green Spicy Pesto Pasta
vegan, serves 4-5, with leftover pesto sauce

Pesto Sauce:
1/2 cup lemon juice
4 Tbsp EVOO
1 1/2 cups raw walnuts
1 cup pistachios, roasted/salted
3 Tbsp pasta water
1 small orange, squeezed
2 cups fresh basil leaves
1 small onion
1 jalapeno (add seeds if you want pesto spicy)
5-8 cloves garlic
1 cup fresh parsley
1/2-1 tsp salt (to taste)
1/2 tsp pepper

pasta: potful of whole wheat penne (but any pasta can be used)

Directions:

1. Grab all your pesto ingredients. Set them by your food processor.

2. Cook pasta.

3. Keeping an eye on your pasta, head over to the food processor and put every ingredient in. Don’t forget to grab a few Tbsp of the pasta water as well. Blend your sauce on high until smooth and creamy. The sauce should be the consistency of a super thick and smooth marinara sauce. A tad thinner than hummus.

4. Drain the pasta and toss it in a thin drizzle of EVOO.

6. Grab your pesto and pour it right over the steamy hot pasta. Fold sauce in. Spritz some fresh lemon over top before serving.
