This is my kind of comfort food. A classic gumbo filled with lots of vegetables. I started this recipe as vegetable soup. See, my husband has been on the master cleanse diet since Ash Wednesday, the beginning of Lent. I thought he might make it the 40 days he had planned, but he fell short. However, I am still really proud of what he accomplished. When you are coming off the Master Cleanse diet, you are suppose to begin with a plain vegetable soup. But how boring is that? I wanted to kick it up a notch, just add a little chicken, and spices. But then I found some okra and andouille sausage, and before you know it, gumbo had appeared in my soup pot. I made a little rice on the side, and there you have it, a vegetable filled healthier version of gumbo.
