I try to buy broccoli whenever I shop, but it often sits in the fridge for days, not an ounce of attention paid to it’s measly little bunch. The kids and hubby turn their noses up at broccoli on most occasions. So, though my intentions to feed them well are there, they are oftened abandoned for the peaceful dinner in which I don’t have to beg them to “fork that broccoli into your mouth, please.” But this simple little recipe may change all that. The rich flavors of bacon, chicken, cheese and broccoli are mixed together, then shoveled into a flaky personal-sized pie crust, for a meal so simple and delicious, you’d never know there was a pound of broccoli featured within.
- 2 cups cooked chicken, diced
- 1/4 cup bacon, cooked and crumbled
- 2 cups of broccoli, steamed until soft then cut into small pieces
- 1 cup sharp cheddar cheese
- 2 prepared pie crusts
In a large bowl, stir together the chicken, bacon, broccoli, and cheese. Unfold the pie crusts and cut them in half. Spoon the 1/4 of the mixture onto one side of each of the pie crusts. Moisten the edges of each pie crusts with a bit of water, then fold them over and press the edges together with a fork. Transfer to a parchment lined baking sheet.
Bake in an oven preheated to 400 degrees for 18-20 minutes, or until the pie crust brown around the edges. Allow to cool slightly before serving. Enjoy!
