Some days I wake up needing a delicious enchilada in my life. Well I need an enchilada in my life more then not, but that’s a different story. When I say delicious that is such a broad statement because it could mean red chile, green chile, mole, pipian, enfrijoladas…. the options are boundless. My favorite is with this lovely spicy sauce of avocado and cilantro. It’s creamy, chile hot and the perfect partner to cheesy chicken enchiladas. Serve them with a side of beans and rice and you’ve got heaven on a plate. Plus the sauce is so easy to make, you’ll never want to look at another canned sauce again. Enjoy!
