Chipotle Chicken Salad SandwichJennifer Savor the Thyme
Being a Sabra Brand Advocate means I have been busy creating recipes using hummus. I had heard of hummus being a tasty alternative for mayonnaise but I have never tried it until recently. And when I think of mayonnaise in a recipe, one of the first things that pops into my mind is egg or chicken salad.
Since my husband loves a bit of heat, I opted to use a Chipotle Hummus in this recipe….
We were quite surprised by the amount of heat that the Chipotle Hummus provided. I honestly think it has a bit more heat than the jalapeno hummus however, do not shy away from it as you can add some lettuce and tomato to the sandwich to take it down a notch. In addition, you get the benefit of the smoky flavor from the Chipotle chilies.
Ingredients (Yield: 2 sandwiches)
3/4 cup Chicken Breasts, cooked and cubed
2 Tablespoons Sabra Chipotle Hummus
1 stalk Celery, diced
1/4 teaspoon Lime Juice
1 teaspoon Cilantro, minced
2 slices of Bread or Roll of choice
Lettuce or Baby Spinach Leaves, optional
Tomato slices, optional
Mix all ingredients and spread onto the bread of choice.
Another way to add to the chicken salad but take a bit from the heat may be with the addition of some dried cranberries or some other fruit. We all love sweet and spicy right?
