Winter for me means soup for lunch, just as summer screams for sandwiches. This chipotle turkey salad is one of our new favorites, made with smokey turkey meat, a few spicy peppers and plenty of vegetables for crunch.
We ate ours with asiago cheese bagels from a local bakery, but it’s also delicious on toasted bread or scooped up with crackers. It’s easy to do ahead for summer picnics or family outings now that the kids are on summer vacation.
Chipotle Turkey Salad Sandwiches
2 1/2 cups smoked turkey breast meat, chopped or shredded
1/2 green bell pepper, diced
1/3 cup red onion, diced
1 jalapeno, seeded and diced
2 tablespoons fresh cilantro, chopped
1/4 cup canned chipotle peppers in adobo sauce (with sauce), chopped
1 cup mayonnaise
1 lime, juiced
salt and pepper
Mix together turkey, peppers, onion and cilantro in a medium to large bowl. In a separate bowl, mix together chipotle peppers and adobo sauce, mayonnaise, lime juice and salt and pepper to taste. Pour mayonnaise mixture over turkey mix and stir to coat evenly. Allow to sit for 20-30 minutes before serving. Spread onto your favorite toasted bread or bagels with fresh lettuce.
