Chocolate Chia Seed Pudding

This super simple recipe is one of my favorite healthy desserts: Chocolate Chia Seed Pudding. I like to make it in the evening and place it in the fridge to chill overnight. It is delish served with fresh or frozen fruit (like frozen raspberries!). It has a texture similar to tapioca. Plus, those superfood chia seeds are rich in nutrients like fiber, protein, minerals and omega fatty acids..

Chocolate Chia Seed Pudding
vegan, makes 1 cup

1 cup soy milk (vanilla)
1 heaping Tbsp chia seeds
1 tsp cacao powder

optional: 1/2 banana (if using blender to combine)
optional: cinnamon

optional: fresh or frozen fruit, nuts and/or sweetener as desired


1. Briskly stir the seeds, cacao and soy milk for a few minutes until the seeds begin to plump. Alternate, easy (no-stir) version: Place all ingredients in a blender and allow to mix on the lowest setting possible (ultra-low) for a few minutes until thickened.
2. Place in fridge to chill.
3. Serve with fresh fruit.
