Soft cake and creamy chocolate pudding is reminiscent of a trifle or cake pudding parfait – so you could also serve this dish in a parfait glass with fresh fruit like banana slices or strawberry slices too.
Chocolate Pudding Cake
vegan, makes one serving
1. Prepare the vanilla cake and chocolate mousse according to instructions. Make sure the cake is cooled and the mousse is chilled before assembling.
2. Stack one slice of cake on a plate. Add a generous amount of pudding. Add the other slice of cake. More pudding. Sprinkles on top.
Vanilla Vegan Cake Batter – Basic
makes enough for about 12-14 muffins or 1 9″ round cake
2 cups flour
2/3 cup organic sugar
1/2 cup vegetable oil (or try coconut oil)
3/4 cup non-dairy milk
2 tsp baking powder
3 Tbsp lemon juice
1/4 tsp vanilla extract
1/2 tsp salt
1-2 Tbsp ground flax seeds + 3 Tbsp water (egg replacer)
Directions: Combine all ingredients and blend until smooth. Bake at 350 degrees for 15 minutes if making cupcakes. Cakes will take 20-30 minutes depending on pan size.
