Chocolate S'more Cupcakes

We’ve been eating s’mores all week. We all have fun roasting our marshmallows over a stove burner with skewers after dinner. Today I wanted s’mores again, but I also wanted to make cupcakes for my son to celebrate a special milestone, his first full night in his own bed. We’ve been co-sleeping with him since he was born. It was easy when he was a baby, but lately he’s been sleeping in between us stretched out lengthwise. It’s been getting pretty annoying, but I have just been waking up in the middle of the night to correct him and lay him the right way. We’ve been talking to him everyday about sleeping by himself, but we never force him into anything at bedtime. Well anyway last night he decided he was going to sleep in his own bed. We didn’t ask, or do anything, he just went in there and went to sleep. I was really happy, but kinda sad too he’s growing up so fast.

For these cupcakes, I used box cake mix, something I use to do all the time but haven’t in a while. I “doctored it up” so to speak by adding my own ingredients and ignoring the package directions. These cupcakes are not the cutest things when you remove from the oven. However, they’re amazingly moist and have a great texture worthy of a s’mores cupcake.

Chocolate S’more Cupcakes

Ingredients

For Cupcakes (Can follow package directions on pre-made box mix or these directions)

1 box devil’s food cake mix
1 box chocolate instant pudding mix
1 cup sour cream
1/4 cup milk
1/2 cup vegetable oil
4 eggs

Toppings (all are per cupcake)
1 large marshmallow
1 square of Hersheys chocolate bar
1 graham cracker

Method

1. Preheat oven to 350 degrees. Mix ingredients for cake. Add box mix, pudding mix, milk and sour cream to a bowl. Mix in stand mixer or with hand mixer. Add eggs one at a time until incorporated. Mix on medium until smooth, a few minutes. Fill cupcake liners about 2/3 full.

2. Bake at 350 for 20 minutes. Remove from oven and top with a large marshmallow. Turn broiler to low and place back in the oven until marshmallow is toasted.

3. Remove from oven and immediately add a square of chocolate and a graham cracker. Let cool about 15- 20 minutes before serving.

    I have to make these! My only concern is that when I put the marshamellow on top and back in the opven.. it is going to melt and make a mess everywhere. But in your picture it looks so perfect! Any tips to make sure they stay that perfect?
